Chicory with Grana Padano flakes, anchovies, Catalogna salad cream, almonds and Ponti Aceto Balsamico di Modena P.G.I.
Ingredients (serves 4)
1 shallot
1 chicory head
150 gr Catalogna salad
500 gr vegetable stock
120 gr grana Padano flakes
30 gr grated almonds
8 anchovys fillets in oil
25 gr Ponti Aceto Balsamico di Modena P.G.I.
Method
In a saucepan, saut the shallot then add the chopped Catalogna salad and some vegetable stock. Once cooked, blend until smooth and creamy. Meanwhile, finely cut the chicory into julienne strips and soaked them in iced water; then toast grated almonds in the oven or in a pan. Arrange the anchovys fillets on a plate on a bed of Catalogna salad cream and chicory, finish with some toasted almonds and a drizzle of Ponti Aceto Balsamico di Modena P.G.I.
