From the classic Ottoman ‘Imam Bayildi’ recipe consisting of roasted aubergines in a rich tomato sauce with copious amounts of extra virgin olive oil. This traditional dish also sits within a range of Greek vegetable dishes called ‘ladera’ which means ‘cooked in olive oil’
