Recipe: Potato Gnocchi with Pesto

Impress your guests with Napolina's delicious Potato Gnocchi with Pesto. This recipe serves 4 people and cooks in only 10 minutes.

Ingredients: 50g pine nuts, 80g basil leaves, clove of garlic, 150ml Napolina Extra Virgin Olive Oil, 50g grated Parmesan, salt & black pepper, 2-3 tsps lemon juice.

Method:

• Heat a small frying pan over a moderate heat and cook the pine nuts until golden, shaking the pan frequently. Allow to cool.
• Place the basil leaves, pine nuts and garlic in a food processor. Pour the oil in a steady stream down the feed tube and wizz until smooth. Stir in the Parmesan, salt, pepper and lemon juice to taste.
• Cook the Napolina gnocchi according to the packet instructions. Stir through generous spoonfuls of pesto and serve immediately topped with pine nuts and Parmesan.

Preparation: Add gnocchi to a large pan of slightly salted boiling water. Cook for 2 minutes or until the gnocchi floats to the surface. Remove from the hob and drain. Serve with your favourite Italian sauce, and to your favourite people.
