Recipe: Harira Soup
Ingredients for 4 people:
Mutti Polpa - Finely Chopped Tomatoes 600g
Pre-cooked chickpeas 400g
Dried lentils 80g
1 onion
1 celery stalk
1 small bunch coriander
1 small bunch parsley
1 teaspoon turmeric
1 teaspoon ground ginger
1/2 lemon
1 tablespoon of Mutti Double Concentrated Tomato Puree
as needed vegetable stock or water
3 tablespoons of extra virgin olive oil
Method:
In a large pot, gently sauté the finely chopped onion and celery, then add the lentils and allow them to toast for a few minutes. Now add Mutti Polpa and Tomato Puree, the chickpeas, the spices, the chopped coriander and parsley, and mix well. Add salt and pepper to taste and pour in enough vegetable stock or water to just cover the soup. Cover with a lid and cook over a low heat for at least one hour, stirring occasionally. Once ready, add the juice of half a lemon to the soup and mix well. Serve the harira soup garnished with a few coriander leaves and lemon slices.
