Vinification details: The time of the harvest is determined by tasting the grapes and analytical parameters. Harvesting begins approximately the first week of April, when the grapes are between 19-20brix. Vinification is carried out as follows: 60% of the wine is traditional, fermented at 25oC whilst the remaining 40% was made by thermo flash. Once the fermentation is complete, the wine is centrifuged, undergoes spontaneous malolactic fermentation is finally sulphited. The grapes were gently crushed and fermented at 25oC during 8 days, after the malolactic fermentation was done naturally in the vats.
