Recipe: Chorizo Risotto (Serves 4)

Ingredients:

• 1 tbsp Oil
• 200g Chorizo, peeled and chopped
• 300g Redondo risotto rice
• 2 tbsp White Wine Vinegar
• 400ml M&S Chicken Stock, heated
• 200g Frozen Peas
• 60g Italian Hard Cheese, finely grated, plus extra to serve
• Salt & Pepper to taste

Hob Method:

• 1. Heat the oil in a large frying pan, fry the chorizo until crisp. Remove the chorizo leaving the oil in the pan.
• 2. Add the rice to the pan, stir well then add the vinegar. Stir for a further 1 min.
• 3. Add the stock 100ml at a time, stirring until all the liquid is absorbed and the rice is almost cooked. It should take approx. 20 mins.
• 4. Stir in half the chorizo, the peas and italian hard cheese.
• 5. Season to taste, then serve and top with the remaining chorizo and italian hard cheese.
