M&S Quinoa & Bulgur Wheat Blend - 100g

Boil - From Ambient. 25 MinsRinse 100g quinoa & bulgur wheat thoroughly in cold water. Bring 400ml water or stock to the boil in a large saucepan on the medium hob over a high heat, add the quinoa & bulgur wheat. Stir, cover with a lid, reduce the heat to low and simmer for 15 mins until most of the water has been absorbed. Remove from the heat, drain off any excess water and stand for 10 mins. Separate the grains with a fork and use as required.Do not reheat.

Serves 6Preparation Time: 30 minutesCooking time: 1 hour 5 minutesIngredients:2 large sweet potatoes, peeled & diced1 tbsp fresh parsley, chopped1/2 tsp onion granules1/4 tsp M& S cayenne pepper 1/2 tsp M& S smoked paprika1 tbsp M& S hot chipotle paste1/2 lemon, juiced100g plain flour150g cooked quinoa & bulgur wheat 1-2 tbsp M& S olive oil6 burger bunsAssorted toppings - lettuce, tomatoes, pickles, ketchup, bbq sauce, mayo.Method:1. Preheat the oven to 200 ºC / 180 ºC fan or Gas Mark 6.2. Peel and chop the baked sweet potatoes and spread on a baking tray. Place in the centre of preheated oven and roast for 20-30 mins or until the sweet potato is tender. Set aside to cool.3. Once cooled add cooked sweet potato to the bowl of a food processor. Blend with the spices, chipotle paste and lemon juice.4. Mix in flour and bulgur & quinoa mix.5. Use hands to form approx. 6 patties.6. Once patties are formed add 1 tbsp of oil to a medium sized saute pan and heat on medium - low heat.7. When the oil is hot, cook the patties. Cook for 3-4 mins on each side or until both sides are crispy. Remove from heat and cover with foil to keep warm while cooking remaining patties in remaining oil.8. Add the patties to your burger bun and top with favourite toppings.
