Recipe: Chocolate Chunk Muffins. Makes 6. Delicious rich indulgent chocolate muffins. Ingredients: 1 Box Chocolate Chunk Muffin Mix, 2 Medium Eggs, 25g Unsalted Butter, 20g Sunflower or Vegetable Oil, 75 ml Semi-skimmed Milk, 6 Paper Muffin Case (included). Oven 200°C / Fan 180°C / Gas Mark 6. Method: 1. Pre-heat the oven to 200°C/ Fan 180°C/ Gas mark 6. 2. Place the paper cases in the muffin tray. 3. Empty the muffin mix into a bowl and add the eggs, butter, vegetable oil & milk. 4. Whisk for 1-2 minutes until well combined. 5. Retain 2 tablespoons/25g of the chocolate chunks for decoration and mix the rest of the chocolate gently into the mix with a spoon. 6. Divide the mix between the 6 muffin cases and finish each with a few of the remaining chocolate chunks. 7. Bake in the centre of the oven for 20 minutes until cooked through and they spring back to the touch. 8. Remove from the oven and allow to cool in the tray for 5 mins before transferring to a cooling rack.
