Grolleau Gris is an ancient and rare grape variety native to France's Loire Valley, where it is mainly grown in the Anjou and Touraine regions. The wine is exceptionally crisp and light-bodied, featuring a naturally lower alcohol level that is carefully achieved by selective leaf plucking in the vineyard. Reducing the leaf area lowers photosynthesis, which in turn reduces the sugar available for the yeast to convert to alcohol, resulting in a refreshing and delicate wine. The crisp mineral acidity of this wine works well with goat's cheese, sushi or delicately spiced dishes.
