100% Pinot Noir. The clay and limestone soils of the Verdon produce elegant Pinots Noirs. Louis Latour has been renowned in Burgundy since 1797 and has produced varietal wines in the Var since 1989. This is a round wine with smooth tannins and subtle dried flower notes. It offers balanced aromas of red fruits and spices.

Tasting Notes
The wine is ruby coloured with garnet tints. It has intense aromas of raspberry and wild savoury notes. The palate displays notes of blackcurrant, liquorice and mocha. This wine is harmonious with ripe tannins and balanced acidity.

History
In the late 1980s, following from the success of their Ardeche project, Latour set out to find an alternative location to grow Pinot Noir. They settled on a high altitude site by a former monastery in northern Provence, sitting at 500m above sea level in the Verdon Hills. Unlike the Ardeche where a partnership was forged with local growers, Latour planted their own vineyards and created Domaine de Valmoissine.

Regional Information
The Domaine de Valmoissine in Var is a high altitude site by a former monastery in northern Provence, sitting at 500m above sea level in the Verdon Hills. Pinot Noir was not known to grow successfully in the high temperatures of Southern France but the high altitude location helped to temper the warm Provence summer days and brought cool nights and the benefits of the Mistral wind.

Vinification Details
Winemaking is simple and employs traditional Burgundian techniques. The wine is de-stemmed and fermented in open top vats. It is then matured in stainless steel tanks for 10-12 months.
