Le Rustique Camembert continues to ripen with time, so you can enjoy it however you choose:
- Young cheese: 35 days or more before the Use By Date
Texture: quite firm
Flavour: light and fresh
- Ripe cheese: Between 35 and 20 days before the Use By Date
Texture: soft and melt-in-the-mouth
Flavour: distinctive
- Mature cheese: 20 days or less before the Use By Date
Texture: very creamy, soft and melting
