Local legend speaks of a woman who stood up and challenged this exploitation; Sophie Valrose. Inspired by her story, Bijou is a tribute to her memory. It is an authentic, dry rosé produced with handpicked grapes from low-yielding bush vines, alike those Sophie harvested many years ago.
Regional information: La Vallée du Paradis is one of the most remote and least-explored corner in southern France. The terroir is characterised by low-yielding old vines with deep roots, which result in grapes with intensely concentrated, rich dark berry flavors, and a distinctive freshness that balances its bold structure. Bijou works exclusively in HVE3-certified vineyards, promoting biodiversity and water conservation, reinforcing a commitment to both sustainability and exceptional quality.
Vinification: A cold soak for the Grenache grapes enhances aromatics and builds structure, followed by a gentle press to retain purity and finesse. Cool fermentations preserve fresh fruit expression, while 2-3 months on fine lees add depth, texture, and a subtle savoury complexity. Finally the three grape varieties are blended together: Grenache, Cinsault and Carignan.
