Vinification
In all, this champagne is a blend of some 50 to 60 crus, each vinified separately until the time comes when it is used in the blend. To achieve a perfect harmony in the blend and ensure consistency in taste and style, Lanson use between 15-30% of reserve wines. One important point: Lanson does not do the malo-lactic fermentation. By excluding this process, the freshness and fruitiness of the individual cuvees are preserved and the wines stay fresh for longer.
