What sets Junmai Daiginjo Shiki Rich Saki apart is not its refreshing notes of sweet strawberry, pear, apple and lychee – although you couldn’t be blamed for thinking so – instead, the beauty of it lies in the rice used in the brewing process. It's made with Yuminariho rice, a variant of Ise-nishiki said to be the origin of Yamada-nishiki, which was recently identified at Mie University and is only used by the brewers at Isake.
