Prunes are traditionally dried from plum varieties that are smaller and denser than the juicier eating varieties. Prune juice is virtually fat free.
Prune juice differs from other fruit juices in that it is not made by squeezing fresh fruit. Instead dried plums (prunes) are rehydrated using boiling water and then strained to remove the stones, seeds and skin.
