High sunshine hours maximise fruit concentration; a long, dry growing season enables aroma accumulation and even ripening. Vinification Details
Each parcel of handpicked fruit is gently destemmed into small open top fermenters, retaining a large proportion of whole berries. The young wine spends a few weeks on its skins before being pressed to a mixture of new and older French oak barrels for maturation. The wine is then bottled without fining or filtration.
