This cuvée is made from very old vines grown on the limestone soils of the ancient slopes of Chablis the roots weave across age-old cracks in the subsoil and are perfectly resistant to climatic hazards to ensure optimal maturation of the grapes. Long aging on lees brings roundness and complexity to this Premier Cru with saline and mineral notes characteristic of its terroir.

Regional information: This vineyard is on the southeast and southwest coasts, benefiting from a maritime climate that moderates temperature and enhances acidity in the grapes. Known for distinct minerality, wines from this region often grow in calcareous and Kimmeridgian soils, imparting a fresh, crisp profile with complex, stony notes. The region's cool climate, combined with varied sun exposure, allows for slow ripening, resulting in balanced wines with bright acidity and subtle fruit character.
Vinification: The vineyard, located on the southeast and southwest coasts,has 40-year-old vines in Chablis 1er Cru.With calcosol and colluviosol over Kimmeridgian subsoil,it enjoys a cool climate.Harvest took place from 4-10 Sept 2022 by hand and machine. Fermentation was 12 days at 20°C in stainless steel tanks,followed by natural malolactic fermentation.Maturation was 30% in oak barrels (20% new French oak, 80% aged)and 70% in stainless steel,with bentonite clarification, cross-flow filtration, and CMC stabilization.
