Bring water to the boil and add Amaranth, simmer uncovered on low until the grain has reached the consistency you require. To achieve porridge consistency for each part of whole amaranth you will need 3 parts water, for a soft texture with distinct grains you will need 2 parts water and for a firm texture you will need only 1 part water.
Warning: Small children may choke on small pieces. Store in cool dry place preferably in an airtight container.
