Preheat oven to 200C/fan 180C/gas 6. In a shallow pan, mix together the garlic and 2 tbsp of the olive oil. Cook over medium heat for 3 mins, stirring occasionally. 2. Pour in the Heinz Basil Passata, then simmer for 8 mins, stirring regularly. Season with salt and pepper to taste. 3. Meanwhile, heat a griddle or frying pan until very hot. Brush a few of the aubergine slices with a little oil, then add to the pan. Cook over a high heat until well browned and cooked through, about 5 mins per side. place on kitchen paper and repeat with the remaining aubergines. 4. Lay a few cooked aubergines in the bottom of an ovenproof dish. Spoon over some sauce, then sprinkle with parmesan and basil leaves. Repeat the layering. 5.
