Recipe idea - Spicy Red Lentil SoupIngredients: (Serves 4)125g Great Scot Red Split Lentils1tbsp Olive Oil1tsp Ground Paprika1tsp Ground Turmeric1/2 tsp Cayenne Pepper1 Onion, diced3 Carrots, sliced3 Potatoes, diced1 Red Pepper, diced1x400g Can Chopped Tomatoes750ml Vegetable Stock1tsp Fresh Basil, chopped1 Bay LeafSalt & Black PepperMethods...1. Soak the lentils in cold water for 1 hour.2. Heat the oil in a saucepan over a low heat & gently fry the spices for 1 minute.3. Add the pre-soaked lentils, onion, carrots, potatoes & red pepper, cook for 5 minutes.4. Add the tomatoes, vegetable stock, basil & bay leaf to the pan with the lentils & simmer gently for 40 minutes.5. Remove the bay leaf, season to taste & blend in a food processor to an even consistency.6. Return to the pan to heat through & serve with a swirl of natural yogurt.

Hob - From Ambient. 1. Rinse thoroughly before cooking.2. Place 100g of lentils into a large saucepan with 500ml of water.3. Boil for 10 minutes, then simmer for 15 minutes, until the lentils have softened but are slightly firm to the bite.4. Drain, rinse and use.

Lentils with Smoky Bacon & TomatoesServes 4Preparation time: 10 minutesCooking time: 25 minutesIngredients:250g Great Scot Red Lentils800ml water, boiling1 tbsp vegetable oil6 rashers smoked back bacon, diced2 tbsp sundried tomato paste250g cherry tomatoes, halvedSmall bunch fresh parsley, choppedMethod:1. Bring the lentils and boiling water back to the boil in a large saucepan and then simmer for 15 minutes. Remove from the heat and drain thoroughly.2. Meanwhile, heat the oil in a pan and fry the bacon until browned.3. Add the sundried tomato paste and tomatoes to the pan with the bacon and cook for 3-4 minutes until the tomatoes have softened.4. Stir the cooked lentils and chopped parsley into the pan and cook for 1 minute to warm through. Serve with roasted Mediterranean vegetables.
