Winemaking Techniques
Hand-harvested into perforated crates, selection of the juice during whole-berry pressing, primary fermentation in temperature-controlled vats, ageing on fine lees. The second fermentation takes place directly in the bottle (using the traditional method). For the second fermentation, the yeast used was selected in Champagne to bring out the finesse and fruitiness of the blends. Aged on laths for 18 months in complete darkness and silence.
Singularity
A unique disgorging liqueur crafted from wines aged in barrels made from various types of wood, notably acacia and oak, combined with varying degrees of toasting, to add a final touch of complexity and depth to the blends.
