Chipotle Steak Fajitas
Serves 2/3-30 mins
400g steak, thinly sliced
1/2 tub of Smoky Chipotle Mix
1 tsp olive oil
4 wheat tortillas
1 red onion, thinly sliced
2 red peppers, thinly sliced
1. Toss steak slices in Smoky Chipotle Mix.
2. Heat olive oil in frying pan over medium heat.
3. Add red onion & red peppers & cook for 6-7 mins.
4. Add steak strips & cook for another 5 mins (for medium steak).
5. Remove from heat & leave to rest for 3 mins.
6. Serve spooned into warm tortillas with guacamole, lime wedges & Gran Luchito Chipotle Salsa.
Also works great with vegetables or chicken
Chipotle Chicken Tacos
Serves 2/3-30 mins
3 tbsp olive oil
1/2 tub of Smoky Chipotle Mix
400g chicken breast, chopped into small bite-sized chunks
8 corn tortillas
1. Make marinade by combining 2 tbsp olive oil with Smoky Chipotle Mix.
2. Add chicken pieces & marinade for 20 mins. Leave longer for a fuller flavour.
3. Heat 1 tsp olive oil in a pan over a medium-high heat. Add chicken & cook for 7-8 mins.
4. Remove from pan & leave to rest for 3 mins.
5. Spoon chicken onto warm corn tortillas topped with lettuce, spring onion, avocado, coriander & dollops of Gran Luchito Chipotle Salsa.
Also works great with fish, vegetables or steak
