Green Enchilada Recipe
300g Chicken breast, cut into chunks
1 Jar Tomatillo Enchilada Sauce
100ml Sour cream
100g Grated cheese
6 Gran Luchito soft taco wraps
Serves 2-3
35 mins
1. Add chicken to a pan of boiling, salted water, cover and simmer for 15 mins.
2. Remove chicken and shred with 2 forks.
3. Mix 1/2 jar of Tomatillo Enchilada Sauce with sour cream and chicken.
4. Add a dollop of chicken mixture onto each tortilla and place in an ovenproof dish. Repeat with remaining tortillas.
5. Pour remaining sauce over the top and add grated cheese.
6. Bake in a preheated oven (180C) for 20 minutes until golden brown.
Low 'n' Slow Recipe
In a hot pan, brown pork loin. Add to slow cooker and cover with tomatillo enchilada sauce. Cook gently for 3-4 hours until meat is falling apart. Serve with rice and Gran Luchito Refried Beans.
