Gold Plum Chinkiang Vinegar (S) is a type of black vinegar made in Zhenjiang, China. It has a sweet caramel flavour and light smoky notes that make it excellent for glazes, stews, and braises. It is also acidic enough to be used as a dipping sauce or as part of a salad dressing. A wonderful vinegar that makes for an interesting Asian alternative to European balsamic vinegar.
