Preparation
Deep fry: From Ambient
Heat oil in a large deep pan or wok (200ºC). To test oil, drop a piece of pappadum into the oil, if it starts to expand and bubble, the oil is hot enough. Gently place the pappadum in the pan, one at a time, holding under the oil with tongs. Take the pappadums out within 3-4 seconds and place upright, allowing excess oil to drain before serving.
Microwave: From Ambient
Lightly brush one side of a pappadum with low fat oil, place on a plate and microwave for approximately 60-90 seconds. Adjust timings according to microwave power and settings.
Other: From Ambient
Open Flames: Roast pappadums one at a time over low gas flame. Turn pappadums frequently using tongs until crispy and golden brown.
