Rajah ground white pepper is ground from ripened berries of the Piper Nigrum vine that have had their outer skins removed to provide a subtle, mild and characteristic flavour that is enjoyed universally as a seasoning and condiment.
Chinese style Tamarind Chicken. Add 50ml sesame oil to a pan and heat. Add 750g boneless diced chicken thighs and 1/2 tsp cracked black pepper. Cook on low heat stirring constantly. Add 2 tsp Soya sauce and mix well. Add 3 tsp tamarind concentrate, 2 tsp sugar and 1/2 tsp ground white pepper. Mix well and add 1 cup chicken stock and salt to taste. Cook on low heat, without lid, until you have a thick sauce. Serve with Thai jasmine rice or Chinese style sticky rice. Cook before consumption.
