Noble One Botrytis Semillon was created by Darren De Bortoli at the family winery in Bilbul, NSW. Noble One Botrytis Semillon owes its complexity to Botrytis or "Noble Rot". Since the release of the first vintage in 1982, Darren and his winemaking team have perfected making wine from fragile, heavily botrytised fruit into the distinctive De Bortoli style recognised as Australia's benchmark sweet white wine. Since its release, Noble One has been awarded over 164 Trophies and 478 Gold Medals.

Layers of intensely ripe botrytis fruit, creamy citrus, nectarine, honey and cumquat blended with attractive oak. Unctuous with a slight touch of refreshing acidity gives length and structure which then delivers a beautifully balanced wine.

History
Darren De Bortoli created Noble One at our family winery in 1982, to this day it is still one of the most awarded wines in history. More than three decades after this pioneering Botrytis Semillon took the world by storm, internationally acclaimed Noble One remains the benchmark of Australian 'Botrytis' dessert winemaking.

Regional Information
We source fruit from the same vineyards each year that have a history of producing high quality Botrytis wine. 50% is from our own estate vineyards here at Bilbul and 50% from another grower at nearby Yenda whose vineyard has had an enduring relationship with Noble One.

Vinification Details
A throwback to the wines of the mid 80's with higher alcohols and slightly less sugar. We harvest, ferment and mature each vineyard separately in French oak Barriques for 12 months to ensure the nuances of each vineyard flavours are captured. When blended together each parcel of wine plays their role in moulding the final wine we know as Noble One.
