Keep
refrigerated 0-5C. Consume within the use by date. Once
pack is opened use on the same day. Suitable for freezing on day of purchase.
Use within one month. Defrost fully before use. Do not re-freeze once
defrosted.
Preparation and Usage
For
perfectly cooked lamb, our head chef recommends:
Slow-Cook:
Dice Lamb & Neck Fillet: Preheat oven to 170C (150C fan)/Gas mk 3.
Cut fillets into 2-3 pieces. Toss in a little seasoned flour. Heat a little
oil in your casserole dish and fry the lamb over a medium heat until
well-browned. Add seasonal vegetables, cook for 5 minutes. Add 400ml of good
chicken or lamb stock, some wine (if you like), cover and pop in the oven for
1-2 hours until tender (neck fillet may need up to 30 minutes more). You may
need to top up liquid during cooking if required. Season and garnish with a
good handful of chopped fresh herbs before serving.
Wash hands, knives and surfaces thoroughly before and after preparing raw
meat.
