For perfectly cooked lamb, our head chef recommends: Pan Fry: Cutlets: Coat with a little olive oil and season well. Use tongs to cook for a couple of minutes stood up on their fat in a hot pan until fat is golden and crispy, then lay flat. Cook for about 3 minutes per side for pink meat, and a couple more for well done. Rest for 2-3 minutes before serving. Wash hands, knives and surfaces thoroughly before and after preparing raw meat.
