Foot treading is undertaken two thirds of the way through fermentation, the wine is basket pressed and then aged in French oak. Innocent weed is far from innocent. Covered in sharp thorns its seeds stick to passersby. Without the use of herbicides it spreads throughout the vineyard, adding organic material to the earth, fostering healthier soil and better grapes.
