Delicious on their own or added to some of your favourite sweet and savoury dishes for a little tasty 'zing'!Try Crazy Jack's Tasty Last Minute CouscousIngredients: (Serves 4)1 vegetable stock cube400ml of hot water200g Crazy Jack Couscous1 knob of butter1 onion1 tomato1 carrot1 red pepper1 cucumber chunk1 handful of Crazy Jack SultanasJuice from 1/2 a lemon2 tbsp olive oil1 garlic clove - crushedA pinch of saltMint/Basil/Coriander for garnish1. Make 400ml of vegetable stock and pour over the Crazy Jack Couscous in a large bowl. Add a knob of butter, cover and leave for 5-7 minutes.2. Chop and dice the onion, tomato, carrot, cucumber and red pepper.Mix together in a bowl with a handful of sultanas.3. Blend the lemon juice with the olive oil, crushed garlic and salt.Using a fork, stir into the couscous. Stir in the vegetables.4. Chop up a good handful of fresh herbs and mix in. Serve on its own or with grilled meat and vegetables.May contain the occasional stone.
