Preparation and Usage
Preparation:Wipe chillies clean, remove their stems, open flat and shake out seeds. To release their flavours: lightly toast on both sides, in a dry pan over medium heat until fragrant. Then soak in hot water until soft, drain and blend into a paste with a splash of water.
