For best results, soak the mushrooms in cold water for 4 to 6 hours, or even overnight, to fully rehydrate and bring out a firmer texture with deeper, more complex flavour.
If you are in a hurry, cover with boiling water and leave for 20 to 30 minutes for a softer bite and milder taste.
