Recipe SuggestionChicken QuesadillaYou Will Need...8 soft flour tortillas180g grated cheese350g cooked, shredded chicken200g soft cheese4 tsp chipotle pasteMethod1. In a bowl combine the soft cheese, chipotle paste and chicken.2. Lay out four tortillas and divide the mixture between them spreading to about 1cm from the edge.3. Sprinkle each tortilla with an equal amount of cheese.4. Place a tortilla on top to form a sandwich.5. Cook both sides of the quesadilla in a dry non-stick frying pan until golden brown.6. Cut into wedges and serve with fresh salsa.
