From the Gela area in the east of the idyllic island of Sicily, Colpasso Fiano is a characterful dry white made from the traditional Fiano grape variety. The Sicilian sun ripens the grapes perfectly, which combined with crisp citrus acidity gives the wine a lovely balance. Fresh and floral with touches of honey.
The grapes for this wine come from the Belice valley, close to the Southern coast of Sicily. Fiano is an ancient grape variety used in the South of Italy, especially in Campania and Sicily. This grape was imported in Italy by the ancient Greeks.
Grape variety: Fiano. Current vintage: 2021. Alcohol by volume: 13%. Units: 9.75.
Vinification details: The grapes are softly pressed, then left in contact with the skins for 12 hours at 10C for extraction of the aromas. Fermentation takes place at 14-16C, after that we leave the wine on its lees at a constant temperature of 16C until the end of January. Prior to bottling February-March we do a very gentle filtration.
