Pelorus is produced from a blend of 70% chardonnay and 30% pinot noir grapes grown in Marlborough's Wairau Valley. A blend from selected vintages, Pelorus exhibits all the hallmarks of chardonnay based sparkling wine; fresh and apple crisp, under pinned by yeast complexity.The pale straw colour and aromas of ripe citrus fruits indicate the chardonnay origins of Pelorus NV. A bouquet of apple and lemon complements fresh bready notes derived from two years bottle ageing on lees. The deliciously crisp palate displays toasty, creamy complexity, enhanced by a lingering nutty finish.
Sparkling wines and Champagne should always be stored in a cool and dry place away from light and heat sources. The ideal temperature for storage is 13-15 degrees C. Warning: Sparkling wines contain high natural pressure. Do not allow bottles to get warm. Chill bottle before opening and avoid shaking. History
Named after the famous-in-New-Zealand dolphin, Pelorus Jack, who escorted ships through a dangerous stretch of the Cook Strait in the late 19th and early 20th Century, it embodies the region's spirit of innovation and commitment to quality.
Regional Information
Pelorus comes from a selection of vineyards planted on the warm stony soils close to the winery. These hold the ideal conditions for the balance of ripeness and acidity required for our signature sparkling wine.

Vinification Details
Following the harvest, the free-run juice was cold settled, before racking and inoculation with selected yeast. Fermentation was carried out primarily in stainless steel tanks, with almost 5% of the blend fermented at warmer temperatures in large format oak vats. A portion was also fermented using wild yeast to build texture and complexity.
