This wine was made with minimal intervention and is quintessential of the Seewinkel area, combining the typical white grape varieties of the region in one harmonious, fruity, charming cuve.
History
Modest Michael Opitz feels passionately about sustainability and quality and so decided to covert his small family winery to organic viticulture, working alongside nature in every possible way. Grape production and home wine production began from the 1920s on this estate. Wine production for sale and export began from the 2000s.
Regional Information
Opitz's wines are defined by their environment. The Neusiedlersee or Seewinkel, is a saltwater lake that, in this flat, warm part of Austria, brings tempering breezes, freshness and protection from vine disease. The resulting wines are tremendously pure, fresh, and fragrant, with a slight salty character.

Spontaneous fermentation occurred in stainless steel. The wine was then aged for 6 months, also in stainless steel.
