It is matured for 12 years in hand selected American oak ex-Bourbon barrels and European oak Oloroso sherry butts and puncheons, before being carefully married together.
Care is taken to add distinct layers of flavour at every stage: every action is judged and considered, from the hand-turned malt, dried in peat-fired kilns, to our longer fermentation times and hand-selected casks.
