Preparation and Usage
1. Combine the batter mix with 225ml of cold water (less for a thicker batter)
2. Stir well to remove most of the lungs.
For best result do not leave to stand - instead use the batter immediately.

1 pack of Tiger Prawns with tails on (or aubergine, butternut squash, courgette, cauliflower)
Oil for frying e.g. vegetable oil

To make Tempura Prawns/Vegetables...
Slice: Slice vegetables or prepare prawns by leaving tails on and making a slit along the belly to prevent them curling during cooking. Heat the boil in a wok until sizzling hot.
Dip: Make up tempura batter according to pack instructions. Coat the prawns or vegetables in the batter.
Sizzle: Deep fry until prawns are cooked or golden brown, approximately 2-3 minutes. Drain on kitchen paper and serve immediately with Blue Dragon Sweet Chilli Dipping Sauce.Instructions

Prawn Tempura
(Serves 2)
112g Tiger prawns, with tails on
Oil suitable for deep frying
75g Blue Dragon Tempura Batter Mix
112ml Ice cold water
25g Flour for dipping
Method:
1. Prepare the prawns by leaving their tails on and making a slit along the belly to prevent them curling during cooking. Dry on paper towels.
2. Heat the oil in a wok or deep-fat fryer to 160C/325F.
3. Make up tempura batter according to pack instructions.
4. Coat the prawns in the flour, then the batter.
5. Deep fry until golden brown, approximately 2-3 minutes.
6. Drain on a rack and serve immediately with Tentsuyu Sauce.
