Amaranth and blue corn are ancient grains so tasty and nutritious that they have been held with reverence as staples of the Aztec diet for thousands of years. As a homage to the communities and traditions that inspired our Tortilleria, we married these grains to create the loveliest of tortilla chips. Together, they have a unique, subtly sweet and earthy flavour. We are proud to be able to work with farmers in Milpa Alta (meaning high corn field) which overlooks Lake Texcoco. This basin is home to the ancient Aztec capital city of Tenochtitlan, known today as Mexico City.Made the Aztec wayWe select the very best non-GMO corn, which we cook then steep overnight, before grinding into a dough called masa using our hand-carved, Mexican volcanic stones. An ancient process called Nixtamalisation. While still hot, this masa is shaped and baked into tortillas. We then leave the tortillas to rest overnight, before being cut and lightly fried into the most delicious of authentic tortilla chips. Three days from start to finish, but we think it's worth the wait.
