Coconut milk was often used in Anglo Indian cooking traditions. This rice dish is a wonderful example - the combination of spices and coconut milk gives this rice a beautiful fragrance. Many of the managers in my mothers catering business were Anglo Indians and would cook this for staff meals and soon it became an item on the catering menu. (Asma Khan)

Cooking Guidelines All cooking appliances vary. This is a guide only. Always ensure food is piping hot throughout before serving.
Oven cook - Preheat oven to 190C, 170C Fan, Gas 5. Remove sleeve and place on a baking tray on the middle shelf of the oven. Cook for 20 to 25 minutes. Allow to stand for 1 minute. Stir and serve. Microwave - Remove sleeve and pierce film several times. Microwave (800W) for 3 minutes. Allow to stand for 1 minute. Stir and serve.
