Unpasteurised honeys have been recognised for their health-giving properties for thousands of years. With plentiful anti-oxidants, including phytochemicals, flavonoids, and ascorbic acid, anti-bacterial and anti-septic properties, unpasteurised honeys not only taste delicious but have long been used in folk medicines. Alemany rosemary honey has a gentle, slightly fruity aroma and a mild, lightly sweet flavour; it is excellent combined with lemon, salt and olive oil as a marinade for chicken.
