Just Add- 1 tbs olive oil- 1 onion, diced- 450g lean lamb, diced- 200g tin chopped tomatoes- 50g dried apricots, halved- 25g sultanas- 300ml cold water3 Easy Steps...1 Pre-heat oven to 180 ºC, 350 ºF, Gas Mark 4.2 Heat oil and fry onion and lamb for 5 mins, until golden brown. Drain excess liquid and transfer to a casserole dish. Stir in tomatoes, apricots and sultanas.3 Mix seasoning with water and stir into the casserole dish. Cover and cook in the oven for 2 hours, until the meat is tender and mouth-watering.Try Something Different: Try replacing the lamb with boneless, skinless chicken thighs for a change. Perfect with couscous, garnished with toasted flaked almonds and Schwartz Parsley.
