Vinification Details
The
best parcels of our single-estate Chardonnay were hand selected by our Head
Winemaker and then meticulously handpicked followed by gentle whole bunch
pressing. Made in the classic method, initial fermentation took place in
stainless steel tanks at cool temperatures before careful blending of the
base wines the following spring. Secondary fermentation occurred in the
bottle, and was aged for a minimum of 36 months on lees in our purpose built
