Onion and Bacon soup with Ponti Aceto Balsamico di Modena P.G.I. Gold Cap Spray
Ingredients
150gr bacon
800gr yellow onions, thinly sliced
4 sprigs of thyme
30gr Taleggio cheese
1 clove of garlic
600ml pale ale beer
Ponti Aceto Balsamico di Modena P.G.I. Gold Cap Spray
Vegetable stock q.s.
Durum wheat bread q.s.
Extra virgin olive oil q.s.
Pepper & Salt q.s.
Method
Cook bacon over medium-high, stirring occasionally, and deglaze with Ponti Aceto Balsamico di Modena P.G.I. Gold Cap Spray. Set aside a few pieces of bacon then add onions and garlic and allow everything to come to a gentle simmer. Add in beer and a few springs of thyme, season with salt and pepper and cook gently for about 1 hour, adding vegetable stock if the liquid reduces too much. In the meantime, cut some of the bread into slices for the base of the soup and some into cubes to sprinkle its surface and toast them in the oven. Spread the Taleggio cheese on the bread slices, place them in a shallow dish and pour the soup over them. Sprinkle with remaining bacon, bread croutons, a few thyme leaves and a pinch of pepper and finish with a few drops of Ponti Aceto Balsamico di Modena P.G.I. Gold Cap Spray.
