Recipes
Boozy Prune and Chocolate Mousse
Serve 4
Preparation time: 15-20 minutes
Ingredients
50g Whitworths prunes, chopped (reserve 1 for decoration)
2 Tbsp brandy
100g plain chocolate, broken up
2 medium egg, separated
200ml double cream
25g caster sugar
How to make
Step 1 - Soak the prunes in the brandy for 10 minutes.
Step 2 - Melt the chocolate in a bowl over simmering water. Remove from the heat, cool a little and stir in the egg yolks and prunes.
Step 3 - Whip 150ml of the cream until starting to hold shape and fold into the chocolate mixture. Whisk the egg whites until stiff, add the sugar and whisk again.
Step 4 - Fold the egg whites into the chocolate and cream mixture and divide between gasses. Chill for 1 hour.
Step 5 - Whip the remaining 50ml of cream until holding in soft peaks. Spoon on top of the mousse, slice the remaining prune and place on top of the cream.
