We travel to the Colchagua Valley, just south of Santiago to source the finest Chilean Prunes. When the plums are perfectly ripe they are gently shaken from the trees, they are then left to dry with a perfect backdrop in the Chilean sun, until they reach the perfect levels of moisture and sweetness.Good by nature...Our Chilean Orchard Prunes are the perfect healthy snack for the whole family! Recipes
Boozy Prune and Chocolate MousseServe 4Preparation time: 15-20 minutesIngredients50g Whitworths prunes, chopped (reserve 1 for decoration)2 Tbsp brandy100g plain chocolate, broken up2 medium egg, separated200ml double cream25g caster sugarHow to makeStep 1 - Soak the prunes in the brandy for 10 minutes.Step 2 - Melt the chocolate in a bowl over simmering water. Remove from the heat, cool a little and stir in the egg yolks and prunes.Step 3 - Whip 150ml of the cream until starting to hold shape and fold into the chocolate mixture. Whisk the egg whites until stiff, add the sugar and whisk again.Step 4 - Fold the egg whites into the chocolate and cream mixture and divide between gasses. Chill for 1 hour.Step 5 - Whip the remaining 50ml of cream until holding in soft peaks. Spoon on top of the mousse, slice the remaining prune and place on top of the cream.
