History
The Casimirri family have lovingly tended their 49 acres of vines and olive groves in the Abruzzo region for more than half a century. The grapes are hand tended and harvested by local villagers in the cooler hours of the day, then spirited off to the winery as quickly as possible to achieve the distinctive fresh taste for which the Casimirris' wines are held in such high regard in the region.

If you've got a bit of a cheese fetish, you can't beat this wine that shares its name with the famous formaggio. The Pecorino grape has been growing in Abruzzo for millennia - and the lucky sheep ('pecora' in Italian) in the area used to nibble on the grapes, hence the name.

Vinification Details
Immediately after harvesting, grapes are soft pressed and only the best of the grape must is syphoned off. Fermentation then takes place in steel at a controlled temperature
