History
Carinena's winemaking heritage goes back a long way.. Many historical records attest to the quality of the wines from Carinena; King Ferdinand I of Aragon listed it as his preferred wine above all others. In 1932, the area was designated as a DO, among the first in Spain.

Regional Information
D.O.P. Carinena is located in the heart of the Ebro Valley in Spain's northeast region of Aragon. The region's prominent strategic situation as a gateway to the rest of Europe has long defined centuries of winemaking history, dating back to the Roman era. Planted at high altitude, the vineyards descend into dramatic windswept plains that benefit from extreme day-to-night temperature differences, ideal conditions for rich, expressive wines crafted from layers of rock, mineral, and earth

Vinification Details
In the vinification process the grapes are macerated before fermentation begins at 8-10 ºC for around 2 days, to start to extract all the colour and aromas from the grapes. During fermentation the temperature is controlled between 24 ºC-30 ºC during 8-10 days and over pumping and delestages takes place daily. After fermentation a maceration is done based on tasting normally for 10-15 days
