History
The Dauny family come from a long line of Sancerre wine growers who have been growing grapes in this region since 1683. Nicole and Christian Dauny are the twelfth generation, and now make wines with their sons Benoit and Thibaut. The vineyards have been farmed organically since 1964.

Regional Information
The grapes were grown at 250-280m above sea level on limestone soils. The name "Les Caillottes"comes from the stony limestone soils that represent 50% of Dauny's vineyards. Here the temperate Loire climate produces a fresh style of Sauvignon Blanc.

Vinification Details
Natural yeasts were used to begin the fermentation process. Temperature-controlled fermentation took place in stainless steel vats at 18-20C.
